Makes 6 patties
Ingredients:
1 cup dry red lentils
1 1/2 cups of rolled oats (can substitute half with breadcrumbs)
2 1/2 cups water
1 medium brown onion, diced
2 garlic cloves, minced
1 carrot, finely diced
1/2 tsp himalayan salt
1 tsp freshly cracked black pepper
2 tbsp tamari
Preheat the oven to 190 degrees celsius. Rinse the lentils several times until the water runs clear. Place the lentils in a saucepan with a pinch of salt and the water and boil for 20 minutes. In a separate pan, sauté the onions in a little water until golden brown then add the garlic and carrots, be careful not to burn the garlic. Sauté for a further 5 minutes. Once lentils are cooked drain any remaining water and mix lentils with the onion mixture in a bowl. Add black pepper, oats, salt and tamari to the bowl and mix well. Once the mixture has slightly cooled but still warm form into 6 patties. Place on a baking tray lined with baking paper (you do not need oil) and bake for 25-30 minutes until the bottom is brown. Serve as needed.
Alternatively, you can cook the patties in a fry pan with a little oil if you prefer.
